Chef’s Special Plate☆Soup à la Mode

The ‘Chef’s Special Plate’ from winter to spring features hearty, soul-warming soups. ‘À la Mode’ in French means ‘modern’ or ‘fashionable’. True to its name, these dishes showcase local ingredients with a chef’s creative twist, embodying modern farm-to-table cooking. Utilizing every part of the ingredients, including peels and leaves, the resort also contributes to reducing food waste. These ‘Soups à la Mode’ are not only full of flavor but also pleasing to the eye. Be sure to indulge in these beautifully crafted soups.

1. Tsukenshima Carrot Vichyssoise

From Tsukenshima, known as ‘Carrot Island,’ comes this delightful carrot vichyssoise. This two-layered soup features a base of carrot mousse and can be enjoyed with a tempura made from the carrot’s flesh, skin, and leaves. It’s a fully sustainable dish, utilizing the whole carrot.

2. Ryukyu Terroir

3. Meltingly Tender Beef Tongue and Onna Village Vegetable Soup Curry

This spicy soup curry is filled with soft beef tongue and an abundance of vegetables. Savor it alongside a cheese-rich turmeric (Ucchin) baked risotto.

4. Tāmu Potage ~ Inamuduchi ~

Tāmu refers to Okinawan taro. Inamuduchi is a soup made with pork belly, shiitake mushrooms, and sweet white miso. This dish is a fusion of steamed Tāmu with white miso and royal miso made in Shuri, creating a smooth, pourable soup. It’s a Japanese-style potage to enjoy.

5. Kitanakagusuku Arasa Seafood Chazuke

This dish features a delicate white fish broth made with Miyabi (a local fish) bones, and grilled onigiri topped with Miyabi fillet. Enjoy the refreshing broth with the rich aroma of Arasa, a type of seaweed.

6. Kumejima Red Chicken and Winter Melon Medicinal Soup Pot

7. Ōgimi Village Karakishinamon Blancmange with Fruit Minestrone

Karakishi, treated as a precious tree since the Ryukyu Dynasty, is a type of cinnamon known in the northern Okinawa Yanbaru (mountainous) region. This dessert pairs a blancmange made from boiled leaves of Ōgimi Village Karakishi with a fruit minestrone created using Karakishinamon syrup.
